No-Bake Millet Granola (Low GI, Cacao & Coconut Sugar)

Crunchy homemade granola made with rolled oats, millet flakes, seeds, nuts, cocoa powder, and coconut sugar—no oven, no refined sugar, no dried berries, and no chia seeds.

Ingredients

  • Rolled oats – 150 g (a.k.a Old-fashioned Oats)
  • Jowar flakes – 80 g (a.k.a sorghum flakes )
  • Bajra flakes – 80 g (a.k.a pearl-millet flakes )
  • Pumpkin seeds – 40 g
  • Sunflower seeds – 30 g
  • Flax seeds – 20 g
  • Almonds (roughly chopped) – 30 g
  • Cashews (roughly chopped) – 30 g
  • Walnuts (roughly chopped) – 30 g
  • Unsweetened cocoa powder – 20 g
  • Coconut sugar – 35–40 g (Natural Sweetner)
  • Coconut oil – 1 or 2 tbsp  (Any Cold-pressed Oil)
  • Vanilla extract – 1 tsp (Optional)
  • Cinnamon powder – ½ tsp
  • Pink Salt – ¼ tsp

Method

1. Roast the Grains

Heat a heavy-bottom pan over low flame. Add the Rolled oats, Jowar flakes, and Bajra flakes. (you can add other Flakes as well ) Dry roast for 6–8 minutes, stirring continuously until lightly crisp. Transfer to a bowl.

2. Roast the Nuts & Seeds

In the same pan, roast the pumpkin seeds, sunflower seeds, flax seeds, almonds, cashews, and walnuts for 4–5 minutes until lightly toasted and aromatic.

3. Prepare the Cocoa Coating

Reduce the heat to the lowest setting. Add the coconut oil and coconut sugar. Stir until the sugar just begins to dissolve—avoid caramelizing.

Turn off the heat and mix in:

  • Cacao powder/Nibs
  • Cinnamon powder
  • Vanilla extract
  • Pink Salt Powder 

Stir until smooth.

4. Combine

Add the roasted Oats, flakes, nuts, and seeds back into the pan. Mix thoroughly until everything is evenly coated with the cocoa mixture.

5. Cool

Spread the granola onto a large plate or tray. Allow it to cool completely. As it cools, it will develop light crunchy clusters.

Store in an airtight container for up to 3 weeks Shelf Life (approx*)

  • Enjoy with milk or plant-based milk. (add Soaked Chia Seeds, & fresh Berries NOT Dried berries here NOT while cooking)
  • Top yogurt or smoothie bowls.
